Paleo Almond Butter Jam Brownies

BROWNIE INGREDIENTS

1/2 cup olive oil

1 cup dairy-free dark chocolate chips
1⁄2 cup coconut sugar
1 teaspoon vanilla extract
3 large eggs

2/3 cups almond flour

1/4 teaspoon baking soda

1/4 teaspoon salt

JAM / ALMOND BUTTER SWIRL INGREDIENTS

2 Tbsp honey

1/4 cup almond butter
1/4 teaspoon salt
1/2 teaspoon vanilla extract
1/4 cup St Dalfour Fruit Spread (Raspberry / Strawberry / Black Cherry / Wild Blueberry all work really well)

INSTRUCTIONS

  1. Preheat the oven to 160 degrees Celsius. Make sure your oven rack is in the upper third of the oven. Line an 20 x

    20 cm pan with baking paper.

  2. In a microwave safe bowl, add the olive oil and chocolate chips. Microwave for 15 seconds at a time, stirring well after each time in the microwave (takes approximately 1 minute). Add the coconut sugar and vanilla, and whisk.

  3. Let the chocolate mixture cool a bit, and then add one egg and whisk until well mixed. Add the second egg, and whisk. Then add the third egg and whisk. The mixture should thicken by this point.

  4. In another bowl, add the flour, baking soda and salt, and mix.

  5. Pour the flour mixture into the chocolate mixture, and mix well. Pour the brownie mixture into the pan and set aside.

  6. In a separate bowl, add the 2 Tbsp honey, 1⁄4 cup almond butter, 1⁄4 tsp salt and 1⁄2 tsp vanilla and mix.

  7. Then, spoon the almond butter mixture and the fruit spread on top of the brownie batter in the pan. There should by clumps of each on top. Use a knife to swirl the fruit spread and almond butter together.

  8. Bake for 40 minutes, or until a tooth pick comes out clean.
